At Jataly Australia Pty Ltd we take pride in our processing of Pacific Oysters.

We split, freeze, and pack each oyster by hand to ensure you receive the best oysters possible.

We only sell oysters and mussels from Tasmanian government approved growing areas. The government continually monitors the water in all growing areas for bacteria and other contaminants. If the water does not meet the standards, the area is closed for harvesting.

The moment we receive oysters from growing areas, we regularly monitor their temperature ensuring they remain within approved levels. Oysters shipped live, are cleaned then packed between 0C and +4C. Frozen oysters are blast frozen at -40C after they are cleaned and split. After freezing they are glazed, packed and stored at -22C.

Because our facility follows a HACCP plan approved by AQIS, we routinely monitor water, ice, product, and working surfaces for contaminants. We regularly take samples and have them analysed by a NATA approved facility. All this is done so you can be assured of receiving the cleanest oysters possible.
